When I go for a super-long ferment and do fresh-cooked toppings, it ends up okay but a little lackluster compared to what I envisioned. But when I make pizza as a “no other option” 2-hour rise meal, that’s when my wife enjoys it the most. idgi

Similar with my brother and i. when the dough is ready i do my thing and sometimes i take 30 minutes to finish putting it together. Then my bro puts it all together in like 2 minutes and he often makes a better one than me. Crazy.
